DESCRIPTION

A refreshing ale, golden in color with a light blueberry aroma.  Slightly sweet and bluish in color with a dense white head, this ale is highly drinkable with a fresh blueberry finish.

DESCRIPTION

One issue all breweries run into while creating amazing recipes is all the odds and ends amounts of malt, hops, etc. As these pile up they can create moments of inspiration as we say to ourselves what can I craft with these random items. With that in mind we have set up our Hop Chef Series. Each one of the beers released in this series will be a truly unique one off as we hope to never have the same odds and ends to work with. Batch #1 is a double dry hop IPA featuring Falconer’s Flight, CTZ, and Eukanot in heaps to bring out tropical and citrus flavors. This is enhanced by the fruity esters from the English yeast strain. Finally we used rice syrup to dry out the beer to make this monster an easy drinking hoppy double ipa along with a blend of malts to provide a light caramel and malty backbone for the high abv.

2 dams blonde ale

DESCRIPTION

An Unfiltered Blonde Ale, golden straw in color with a slight haze and a fluffy white head of foam. A crisp, session ale balanced for accessible flavor and drinkability. Light malt flavor with a gentle American hop aroma.

vixens vanilla cream ale

DESCRIPTION

Spiced beers are a tradition for the holiday season.  Our holiday spiced beer is Vixen’s Vanilla Cream Ale. This deep golden ale is spiced with premium vanilla from Madagascar, fresh Celyon (mild) and Korintje (traditional) cinnamon, and sweet orange peel.  The resulting beer has a slightly fruity, sweet cookie-like nose. The flavor is mostly vanilla, but is balanced by subtle spice of the cinnamon and finishes with the crispness of the orange peel. These spices were added to the kettle during the brewing process and also in the aging tank for increased depth of flavor.  Malt character is slight, while hop flavor and bitterness are close to absent. Matching the spice is a little holiday cheer, as this beer rings in at 5.9% abv.

Orange IS the new blackberry porter

DESCRIPTION

Brewed in the vein of warming winter porter this beer combines roasty chocolate notes with blackberry to create an easy drinking dessert in a glass. On the malt side we used 3 different chocolate malts to produce a layered dark chocolate backbone to the beer, along with oats and munich malt to give it a little sweetness. On the hop side we used a late addition of cluster to enhance the blackberry notes. Finally we added a hearty helping of blackberry to build a beer that drinks like a nice slice of fruited dark chocolate cake.

Big ed's red hop yard

DESCRIPTION

Brewed in celebration of the harvest time.  Fresh hops picked at Big Ed’s Hop-yard to be used within 24 hours.  The fresh hops vs. the dried hop contain more essential oils that are commonly lost when heat is applied during drying. This year we went all out and added 60lbs of fresh hops from the yard.  This 2019 batch changes things up a bit from the past by going the route of a red ale. This beer pours a nice deep dark red with notes of caramel, and a light roast character. The hops will shine through in a unique way in both the flavor and aroma.  Clean & dry finish without being overly hoppy or bitter. This year features a large Centennial and Columbus crop which emphasizes the fruity hop flavor.

buzzin' honey ale

DESCRIPTION

A light colored honey ale brewed with Talbot’s honey out of Ripon Wisconsin. This beer is unfiltered, light, and highly crushable. Look for a backbone of grassy malty notes from the pilsner base matched alongside a strong wheat character from the Briess wheat malt. This beer has a touch of floral honey on the palate and on the nose and finishes dry, inviting you back for another sip.

DESCRIPTION

Hops are here to stay.  Sometimes the higher alcohol levels in a Classic IPA can get in the way of enjoying hops all night long though.  With our Reel It In – Session IPA we have the bold character of hops shining from the aroma through the finish.   Light golden colored with a slight haze and a fluffy white foam. Bright citrus hop aromas invite into a medium-light bodied ale balanced with a crisp hop flavor.

greta van zeppelin black lager

DESCRIPTION

When bottling day arrives and you turn Pandora to 90’s alt rock, it suggests Greta Van Zeppelin. When you change it to black metal, Great Van Zeppelin appears. Even when, in a moment of desperation for variety, you turn on Finnish Folk music, Greta Van Zeppelin appears. With that in mind we brewed a black lager to mimic the success of the classic German Schwarzbier, with mild changes to make it our own. Expect this beer to pour a dark brown/light black with a strong and smooth roasty nose with hints of chocolate. On the tongue the healthy addition of molasses shines with a slight twang and flavors of star anise. The thing that stands out the most about this lager however is its smooth character despite the large percentage of dark malts used. This is due to a cold steep process pioneered by Briess malting that produces a smooth character reminiscent of the character of cold brewed coffees and teas.

DESCRIPTION

A malt forward ale with a deep amber color.   Specialties malts deliver flavors of caramel, toffee, toasted, and a touch of chocolate and roast.  Hop levels are low with a faint bitterness and mild floral aroma. Medium to medium-full bodied.

DESCRIPTION

This British style pale ale will take you across the pond! English and American hops give this beer earthy and floral notes to help balance the caramel, nutty and biscuity flavors from the english malts.
Let’s raise a proper pint of this easy drinking pale ale and toast Gary Timm the “Shepley Kid”, who was larger than life in the tiny tiny town of Shepley, WI! Shepley Will Shine Tonight!!

cocoa puffs brown ale

DESCRIPTION

Developed by and brewed with Jeff Eaton of The Society of Oshkosh Brewers homebrew club this lighter sessionable english brown ale was mashed with a ton of cocoa puffs breakfast cereal. Brewed with a dry english yeast strain the beer is smooth and slightly fruity from the fermentation. On the malt side it has hints of roast and chocolate with some honey sweetness from the honey malt.

metternichs brau

DESCRIPTION

This beer as its namesake would imply is a stalwart defender of tradition and stability. Looking to be described as classic, traditional,  or dare I say it to style Metternichs Bräu scoffs at such modern and liberal folly as adding tons of fruit, over hopping, souring, lactose milkshakes, and especially additions of glitter that have gripped so many wayward brewers. Expect this beer to pour a nice light amber and to showcase the toasty and bready notes of its namesake Vienna malts. It will finish dry and malty, with just enough hop aroma and bitterness to keep you coming back for more.

FLIGHT OVER THE 7CS

DESCRIPTION

This hop bomb of a beer is batch three of our series of low bitterness, low alcohol, high flavor IPAs. On the malt side we tried something new by incorporating raw wheat with a massive hit of oats. This lends a creamy body to the beer to backup all that hoppy goodness. On the hop side we used the Falconer’s Flight and 7C’s hop blends along with a massive dry hop of Centennial and mosaic  to deliver classic piney, resiny, lightly citrus C hop flavors without bitterness bringing out a pleasant almost candy like juicy flavor with the added depth of the fruity mosaic. We enhance this further with the fruity esters of an English yeast.

FOX FIX SELECTION - Hoppy Otter

DESCRIPTION

This otterly delicious amber lager has a bit of an identity crisis. It is brewed with English malts, lagered like a continental beer, and hoped with a hearty helping of mosaic in the whirlpool and defies easy categorization. On the malt side it will have a strong backbone from the maris otter with hints of biscuit and nuttiness, followed by notes of caramel and toffee from the crystal malt, and finishing with a hint of chocolate. This is complemented by the tropical fruit flavors coming from mosaic hops.

A golden ale mixed with blueberry juice concentrate and natural extract.  The result is a light fruity ale with an enticing aroma and flavor of fresh blueberries.  Slightly sweet and highly drinkable, pours with a slight bluish stained color and dense white head.  Garnished with a fork full of fresh blueberries on draught.
